Growing up in a Carribean household, I ate mostly plant-based foods rooted in Puerto Rican, Haitian, and Trinidadian cuisines. Outside of my home, the street vendors of New York exposed me to foods from all parts of the world. Every week, in my borough and beyond, I try an endless variety of fried, stuffed, pickled, and steamed foods.\u00a0<\/span><\/p><p class=\"p1\"><span class=\"s1\">As an environmental scientist, I became interested in the convoluted relationship between food production, waste, poverty and access. Having studied in Ithaca, New York, I gained hands-on experience with farm-to-table dining, agricultural unions, and locally-based produce management. At the same time, I learned that many of these environmentally conscious, seemingly sustainable projects\/activities were economically, geographically, physically, and temporarily inaccessible.\u00a0<\/span><\/p><p class=\"p1\"><span class=\"s1\">Here you\u2019ll find delicious ways to repurpose your scraps, limit your food waste and participate in closed-loop waste systems.
